I like this lay-out a lot it make set up and take down very easy. Three wall's stay on during the cook. The overall working area is 7.5’ X 10'. I work right off the trailer with a floor mat in the center. A five drawer tool chest for all supplies with a propane burner on top of the chest. The table on the right is food prep. on the left is wash, rinse & sanitize station. I have a laundry sink mounted on a 25 gal. plastic barrel that holds the gray water. Under the table where the coolers are is a 30 gal. fresh water tank, (battery / converter to run the pump for the sink & misc.) & storage. I use a Coleman portable On Demand hot water heater for hot water that I draw from the fresh tank. One 5# propane tank supplies both the burner & Coleman. Of course I have two WSM on the tail end of the trailer.
Two people can work off the trailer without any problem.
