    I"m told that you don't have to season a WSM like you might a UDS or a new offset cooker. The parts are either porcelin or chrome and thus not needing seasoning. I did however fire it up without food and without a water pan and let it get hot.

    The various blogs also say that a WSM will "season" if thats the right term by building up a layor of smoke residue inside which helps create more consistent temps etc.

    this is my first WSM so I'm new to a lot of this stuff. I can say though that my first experience was great and I look forward to learning how to do this better.

    My next cook (soon I think) will be a couple of chickens to see if I can improve on what I did in last year's Alki Beach State Championship cookoff.
